The Robles fazenda, named after its founder, Augusto, is in the Coban region of Guatemala, in gentle hill country 1500 metres above sea level. The growing operation, launched in 1998, is strictly family run, with a permanent workforce of 11 and another 40-50 seasonal workers at harvest time, generally from December to March. Augusto exploits his land's conformation to grow two different varieties, Caturra and Pache, on shaded terrain at high altitude. Over the years, Augusto has perfected the honey process; instead of traditional fermentation of the cherry, some of the mucillage (or "honey") is left sticking to the two beans during drying, for extra body and sweetness.
