In the Coban region of Guatemala, on gentle slopes at an altitude of 1500 metres stands the Robles estate, which takes its name from its founder, Augusto. Production began in 1998 and is family-run, with 11 permanent staff and a further 40 to 50 during the harvest season, usually between December and March. The mountainous landscape means Augusto can grow two different varieties, Caturra and Pache at high altitude but in shade. Over the years Augusto has perfected the honey processing method, which does not use traditional fermentation of the cherry, but in which part of the flesh - the mucilage - remains attached to the two seeds during the drying process, giving the coffee remarkable body and sweetness.
